Linguine with Shrimp, Bacon, & Tomato
One of my favorite dishes while growing up was shrimp scampi. This dish is both an original and modified version of this Italian restaurant classic. The great thing about cooking it at home is that you can make the sauce as refined or simple as you like.

Ingredients (serves 4)
1lb shrimp (16-20), peeled and deveined (leave the tails on if you wish)
2 tbs olive oil
4 slices gluten-free turkey bacon, diced
1 cup grape tomatoes, halved lengthwise
4 cloves garlic, minced
4 tsp chopped fresh rosemary
2 10oz. bags of frozen chopped spinach
2 large sweet yellow onions
sea salt and freshly ground black pepper
¾ cup fresh lemon juice
6 tbsp extra virgin olive oil
sea salt & freshly ground black pepper to taste
½ cup of unsalted butter
